MINI MEAL Lemongrass & Galangal Earthy Veg with Soy-Mustard Chicken
The inspiration to come up with this meal came from the fragrant scent of lemongrass and unique taste of galangal (a cousin of ginger and turmeric, that is equally mean nutritionally!), and how we could use these wonderful flavours with vegetables that are loved by everyone.
The result was this magnificent meal that features heavenly roasted sweet potatoes and pumpkin, coated with a touch of turmeric and galangal. Paired with them comes a side of steamed broccoli adding colour and great nutritional value to the dish.
The wholeseed mustard and soy chicken is marinated overnight with the finest ingredients we could source, and then grilled to perfection. It provides all the complete protein in the meal and tastes AMAZING!
This is a really versatile meal that can be eaten at anytime during the day, it contains a moderate amount of fibrous carbs that provide the right dose of energy but without being heavy to digest.. you will be feeling light and well nourished after this meal.
CHEF’S TIP: Have this meal warmed up and chop some fresh chili and coriander leaves to sprinkle over the top. Warm up the chicken separately in a fry pan for 2 or 3 min.
WARMING UP: Pre-heat oven @ 180ºc. Pierce film a few times and place in oven for 12min. Alternatively, microwave it for 1:30min. NOTE: When warming up in the oven, the label will turn black and film may come off slightly. This is totally normal and won’t affect in any way the quality of the food.
