MINI MEAL South-American Superfood Quinoa with Chicken Provenzal

We never get tired of Quinoa!… We are always coming up with new flavours and ingredient combinations to go with this really awesome, super-dooper nutritious seed.
We love using quinoa in our menus because of its versatility and nutrition profile. Providing all nine essential amino acids needed by our body to regenerate itself and maintain lean muscle mass, rich in minerals and B vitamins, high in fibre and providing quality wholesome carbohydrates, it is a superfood we couldn’t live without!.
A delicious mix of fresh, crunchy raw vegetables and kidney beans that provide flavour and complete nutrition to the meal are partnered with white and black organic quinoa, extra virgin olive oil and some south american spices, making of this salad a total winner!
A touch of Extra Virgin Olive Oil is added to the salad for flavour and as a source of healthy, cholesterol-lowering monounsaturated fats.
The Provenzal free range lean chicken breast is marinated overnight with garlic, parsley and lemon juice as the main ingredients. Then we grill it to perfection to partner with this gorgeous quinoa dish.
TIP: Best to have it cold!…If in need for something warm, grab a pan and add some organic butter or your favourite cooking oil to fry up the chicken for 2 or 3 minutes. Add the quinoa salad inside the same pan and mix up for 2 min till warm.
