VEG MINI MEAL P.E. Nutritious Vegan Caesar Salad with Organic Herbed Tofu
We couldn’t leave out a Caesar Salad in this Spring Menu!!
Our take on in this know-by-all salad is as nutritious as it is delicious. We just had a few things changed around and added our unique PE touch on it.
To break with the tradition, we added spinach leaves mixed with the Cos lettuce, Cannellini beans for enhanced nutritional profile and fibre, and gluten free croutons.
We opted for an absolutely mind blowing Vegan Caesar dressing, making this meal also dairy free!. This dressing is much more lighter and natural, made weekly by us and containing a base of, hummus, garlic, capers, seeded mustard, lemon juice, extra virgin olive oil, pepper, and Himalayan Salt…nothing artificial added, just pure goodness!
A refreshing and addictive cold salad to have anywhere you go at anytime… full of fresh vegetables, lean protein and quality carbs!
TIP: Eat this meal earlier in the week as with time the croutons will absorb moisture from the veggies and go slightly soft…. if this happens, remove them and place them on a tray/oven proof dish in oven at 200˚C for 8min to make them crunchy again!
