VEG Organic Massaman Tofu Curry with Roasted Veggies
For what’s left of the spring season (and of the year!) we longed for a fragrant and hearty dish with a little hint of the great south east of Asia. This meal was inspired by the flavours in Thailand, a rich and relatively mild Thai curry that is the perfect way to spice up your meals and as always, we twist things a little to boost up your health!
We used our organic tofu that sinks in the heavenly juices of the masssaman curry, and chose to pair it with a variety of roasted vegetables and steamed bok choy to add a little tang and colour to the dish.
A high in fibre dish that has all the essential nutrition and protein to boost up your healthy eating and help recover after a sweaty workout!
WARMING UP: Pre-heat oven @ 180ºc. Pierce film a few times and place in oven for 12min. Alternatively, microwave it for 1:30min. NOTE: When warming up in the oven, the label will turn black and film may come off slightly. This is totally normal and won’t affect in any way the quality of the food.
