Lamb Kleftiko - Lebanese Roasted Beetroot, Herbed Potatoes and Beans
This is another paleo meal we come up for the summer menu!! Just grass fed lamb and a delicious mix of veggies!
The Lamb Kleftiko recipe we make is quite traditional Greek…heaps of rosemary, thyme, garlic and lemon juice, with the addition of some “extras” that we believe make this slow cook dish be even yummier and an absolute winner!!
Partnering this heavenly tender meat with some golden-brown roasted potatoes, steamed green beans and as a distinctive element, some pomegranate molasses coated beetroot roast and you’re set to an amazing flavor journey that will make you sad once it’s over.
Nutritionally this meal is all about fibre, phytonutrients, minerals and vitamins as well as a decent dose of complete protein.
