MINI MEAL Pineapple & Green Veg Thai Curry with Lemongrass Chicken

This is our take on a delicious and low carb, grain free pineapple curry!. It is a classic in Thai cuisine and we absolutely love the aromatic flavours and sweet&spicy notes of it.
We serve this meal with a heap load of nutritious green veggies, some red capsicums for intense colour, and we add a touch of sweet pineapple to break with the spicy notes of it and bring some contrast in flavour.
Providing lean complete protein we have a new delicious grilled chicken, which we marinate with Thai spices and lemongrass that combine really well with the veggie curry!
This meal provides you with a great dose of healthy vegetables and micronutrients needed to support a healthy body and also, as always in all our food creations, complete protein to support muscle mass and optimal recovery.
