SIDE Pineapple and Green Veggie Thai Curry

This is our take on a delicious and low carb, grain free pineapple curry!. It is a classic in Thai cuisine and we absolutely love the aromatic flavours and sweet&spicy notes of it.
We serve this meal with a heap load of nutritious green veggies, some red capsicums for intense colour, and we add a touch of sweet pineapple to break with the spicy notes of it and bring some contrast in flavour.
This is another awesome way we offer fresh delicious vegetables for you to have no excuses than eating more of them!!
