VEG MINI MEAL Roasted Potatoes & Eggplant Caponata with Grilled Herb Tofu
In this occasion we get inspired by greek and Italian flavours to come up with this amazing meal!
Our staple organic herb tofu recipe is a delight, and it provides most of the protein in the meal. We marinate it with a whole bunch of fresh herbs, garlic extra virgin olive oil and lemon juice and we then grill it to perfection.
The potatoes are roasted till golden brown, tossed with some fresh dill and accompanied by a really awesome Sicilian classic side dish: Caponata - made out of firm eggplants, sun dried tomatoes, onions, kalamata olives, baby capers and balsamic vinegar- just pure mediterranean goodness!
This is a delicious and feeling meal, perfect for recovering after exercise as it contains some quality carbs from potatoes and also offers a great balance of meat and vegetables for optimal wellbeing.
Definitely a restaurant-like meal...you gotta try it to believe it!
